YOY NEO BISTRO INTRODUCES EUROPEAN GASTRONOMY MENU WITH UKRAINIAN ROOTS

DUBAI, UNITED ARAB EMIRATES, 13 FEBRUARY 2025: YOY Neo Bistro recently opened in Shangri La Hotel, SZR and launched a unique concept that combines Ukrainian heritage recipes and dining traditions with international flavours and cooking techniques, serving each dish as a work of art, with meticulous attention to detail in both presentation and taste.
MENU HIGHLIGHTS 
Fermentations and Pickles. Drawing from memories of his grandfather’s cellar, Head Chef Yurii Kovryzhenko brings centuries-old Ukrainian fermentation heritage to life. Signature creations include grape kimchi, blending traditional techniques with Asian influences gained during his travels. Foie Gras Terrine. Foie gras, fermented with pink salt, black pepper, and alcohol-free brandy, is paired with cryogenically frozen raspberries and fresh raspberry sauce for a balance of richness and freshness.
Borsch. Chef Yurii’s borsch, an ode to the Ukrainian culinary soul, has captivated the world and earned praise from international media, including the Michelin Guide. Pigeon with semolina porridge and sour cherries. A nod to Yurii’s training at the Ritz Ecole Escoffier in Paris, this dish features medium-rare pigeon marinated in preserved lemons, complemented by sour cherries and local farmer-sourced dates. It reflects the harmony of premium ingredients and respect for regional farming.
Napoleon cake. Inspired by his mother’s holiday tradition, this Napoleon cake is served in a cup – just as Yurii’s mother did when using leftover crumbs and cream. Reimagined with bourbon vanilla custard, organic strawberries, and strawberry foam, it bridges nostalgia with innovation while honoring the simplicity of homegrown flavors.

Dedicated to environmental responsibility, YOY integrates sustainability at every level. Ingredients often overlooked, such as tomato skins and watermelon rinds, are transformed into delectable elements like crispy chips and candied sweets.
With a science-driven approach, YOY uses advanced culinary techniques, including Dubai’s first rotary evaporator at the restaurant mini-lab, to create flavor extracts through low-temperature distillation, intensifying each taste and enhancing every dish.
“At YOY, our goal is to honor the richness of local ingredients and bring new perspectives to them through a global lens,” says Chef Yurii Kovryzhenko. “We’re committed to sustainability, zero-waste practices, and presenting guests with familiar and completely new flavours. And, of course, it’s my turn to become a storyteller, sharing with guests some of my warmest childhood memories from Ukraine through the language of gastronomy.”
