Elevate Your Lunch Experience and Explore Sfumato’s New Tasting Menu
DUBAI, UNITED ARAB EMIRATES, 02 October 2024: Sfumato, at the Zaha Hadid-designed ME Dubai Hotel in Business Bay, is inspiring guests to try something new and unique with the launch of its lunchtime tasting menu that infuses European cuisine with Asian influences.
Set in one of Dubai’s architectural wonders, the Sfumato tasting lunch is a carefully created experience that encourages conversation amongst guests and challenges the norm by blending modernist cuisine with timeless techniques and storytelling.
The six-course menu perfectly blends bold flavours and textures with a side of artistic flare and is designed to be a treat for all the senses when catching up with friends or hosting clients, as it can be served fast or slow and with or without a little storytelling.
Sous Chef Jince Joseph, who co-created the new menu, took inspiration from the different cultures and nationalities visiting the restaurant. He challenged himself to push boundaries by including fermented ingredients to add depth and promote healthy dining.
The experience starts with an amuse bouche of Mushroom Chai, a warm cup of umami-rich mushroom broth designed to awaken the palate for the courses ahead and is followed by crispy toasted sourdough Bread-and-Butter with a velvety and indulgent kimchi spread.
There is a choice of two first courses: Kimchi Razhenka Seabass paired with a vibrant kimchi and fermented ginger medley with baked razhenka, crispy cashews, and aromatic curry leaves, or Avocado Kebab that blends textures of seared avocado on crispy tortilla bread with fermented tomato salsa, potato rosti, and Gruyère cheese.
Following the first course is another two options of Shisho Beef Stroganoff on a crispy shiso leaf topped with creamy beef, mushrooms, pickled onions, and topped with a sprinkle of wasabi or Handmade Thai Green Gnocchi paired with delicious crunchy pickled vegetables.
Cleanse your palate with the homemade Blueberry Kombucha, balanced with tamarind pearls, offering a moment to refresh before ending on a sweet note with a slice of Kyiv Cake. This classic Ukrainian treat layers meringue, buttercream, and cognac caramel and is topped with hazelnut ice cream.
As the Pastry Chef at Sfumato, Mariia Chornohrytska took inspiration from her home country of Ukraine when making her version of the Kyiv Cake. She masterfully paired familiar flavours with surprising textures when creating her playful take on the menu’s petit fours.
